Ever tried speckle trout ..

I've only ever tried Specs once for about 2 weeks, brought back about 20lbs from the coast a few years back but don't recall how they were prepared. Mostly grilled I think. Anyway tried a variation of yours on some Walleye last night, Beer & egg wash and a cornmeal with Cajun spices mix, UMMMummm. Pass the beer.
