Does anyone here think that Win CE is a good technology? Outside of the MSFT jugernaught, what if any advantage does it have?

I have been shopping for point of sale systems (high tech for cash registers)for my, and other friend's restaurants'. Today's POS is expected and capable of doing so much more than it's predecessor, the cash register, it's perhaps more approriately called the comprehensive data input terminal. Time and attendance, any minute detail regarding sales per item, cost per item and so on. The terminals display current input data (customer order)on remote monitors in both the kitchens and prep areas for SoS. These terminals are then linked via a hub to a PC in the office where data is stored and further functions take place.
The system I like best uses WinCE w/ flashROM. The advantage of CE is that(in my technotarded understanding) is that the OS is slimmed down to be more app. specific, simplifying it's tasks and reducing the chance of what I describe as brain lock due to software conflicts. This is what causes systems to fail on those Friday nights when customers are lined out the door. Additionally, the elimination of the HD in each terminal has it's advantages re: reliability. This configuration seems to be the hardware of choice of Tricon Global Restaurants who operate and franchise 22,000 rest. worldwide. (I just wish I could get em' to reduce their price a couple K and it would be a no-brainer.) I can see wide spread use for the technology ie, ATM cash machines with streaming video and voice recognition.
