Strawberries Romanoff

1 C heavy cream
1 Pint Vanilla Ice Cream
juice of 1/2 lemon
2 OZ Cointreau
1 OZ rum
2 quarts strawberries hulled

Whip cream, combine with softened ice cream, add lemon juice, cointreau and rum. Pour over strawberries. Eat. Get very fat.

Strawberry mousse

1 quart strawberries
1 1/3 C confectioners sugar
2 C heavy cream, whipped
1/4 tsp salt
1 tsp vanilla
Sugar washed and hulled berries let stand 1 hour. mash and strain. Add salt and vanilla to whipped cream. Fold into mashed berries. Freeze in 2 refrigerator trays or in a mold.

Somewhere in this house I have a terriffic recipe for strawberry pecan bread. I will post it when I find it. I hope you weren't expecting diet recipes.
