The Basis for a JAVA cookie?

1 quarter-pound stick softened butter
6 Tablespoons granulated sugar
6 Tablespoons dark-brown sugar
½ teaspoon salt
½ teaspoon vanilla
¼ teaspoon cold water
1 egg
½ teaspoon baking soda
1 cup all-purpose flour
1 six-ounce package semisweet chocolate bits
¾ cup coarsely chopped pecans
1 Tablespoon soft butter.

[You might use high-quality sweet chocolate bits & substitute tablespoon of freshly-brewed espresso to make a JAVA cookie.)

Preheat oven to 375 degrees

Combine butter, white & brown sugar, salt, vanilla and water into mixer. Beat until light & fluffy.

Add egg and baking soda until they are blended into batter

Fold in chocolate and nuts.

Crop the cookie batter onto a cookie sheet that has been sprayed with PAM. Leave 1 ½ inches between the cookies.

Bake for 12 minutes or until the cookies are firm to the touch and lightly browned..

[DEAR JCJ, WOW! Your mom sounds like a pro. No wonder you are picky about your chocolate-chip cookies. I found the above recipe.

You and your mom will laugh & so will everyone else but my oven is broken. I never replaced it. The reason: I didn't want to bake. So I can't try out your mom's recipes. I might try a micro-wave job.

Mebbe someone else will try & send us a sample of their cookies
