Annette.. that really surprises me. I fixed it last week for company and let it cook for 6 hrs in the oven and it was unbelievably tender. You have to leave a layer of fat on it for sure... did you trim it all off? If you have leftovers... try cooking them for another hour or so and see if that helps. Wish I could fax you some of these left overs I have.. they are yummy. c
