Now, I see they are only displaying 100 shares, even when they have a customer order for 1000 shares. By doing this, they create an advantage for themselves, while providing a significant disadvantage to both their customers and the other traders in the marketplace.

Yep, the worst thing is, you never know how much really he is willing to sell and even more than that: he changes his mind depending on the way you put order in! For instance, try to SOES him, and you will get 100 shares almost for sure. Route SNet All Or Nothing, and most likely it will be ignored. Send SNet Any, and you might get whole 1000. What is it, just an ego? "Don't make me, ask me"?
