No, I don't avoid cooked down or burned off alcohol.

It was originally solely based on conviction. The Quaker Yearly Meeting I grew up in (Philadelphia) had a Query (which is the closest we come to creed, and is a series of questions to ask of yourself and your Meeting) which asked "Do you abstain from the use of alcohol and tobacco, and the misuse of drugs?" One was strongly encouraged (!) to answer yes, and I did. Since then, although that conviction remains, I have also seen the tragedy that alcohol is responsible in so many lives, particularly in the area of family law where I work, that I abstain also from unwillingness to contribute to an industry which causes so much human misery. I do NOT believe in restoring prohibition -- as a libertarian I think people have the right to make their own choices -- but I would love to see everybody just say "no" to that drug, which IMO is a far more dangerous drug than many which are now illegal (and should be legalized too).
