Higher prices are always nice, but most business and consumers want stable prices, which makes decision making easier. Especially in a commodity business, it sure helps to know what you will get for your product in the future to make decisions today. Hedging, forward sales, options, etc.. are all way to get some control. One can't predict the future, but you can do things to set some parameters and control the risk.
