Nectarines are a stumper. They are so fragrant, so flavorful, when they are ripe, but they seem evanescent. Peaches are sturdier, and so are plums, which is strange because nectarines are a cross between peaches and plums. I've never seen nectarine jam or jelly, nor frozen nectarines. Never even wondered why. It stands to reason that you could freeze them by slicing and laying on a cookie sheet in the freezer, and then putting in a zip-loc when the pieces are frozen. Would be good in smoothies.
Wonder if you can peel them like peaches, put them briefly into boiling water, remove, rinse under cool water, and then slip off the skin. Works on tomatoes, too. I just looked on SOAR, you might get some ideas there.
Nectarines in brandy don't sound as good as peaches in brandy, but you've got the nectarines, why not try anyway? Make sure you keep it well covered, as flies and gnats will love it if they can get to it. But not too covered, as the fruit will ferment. Maybe if you try the hot water trick, that will kill the yeast on the skins. |
