You're right -- they were pretty much written late in the first century, but they were also passed around and copied many times and probably edited before they were put into what we now accept as the standard Biblical collection (and how that came about is a fascinating subject for another time.) But if I am recalling my Biblical history correctly, there is no evidence that Paul ever met or knew Jesus, so everything he knew was already at least second hand.
