I love salad, too. I have been eating a lot of salad, myself, this week. After I take Nick to school, I go to the office until it's time to pick up Ben. For lunch I go across the street to the courthouse, and the only thing that's decent is the salad bar, but that's very good. Not just vegetables, but also bowls of prepared salad, like marinated spinach with sliced cherry tomatoes and Burmuda onion slivers, or marinated julienne of red, yellow and green bell peppers, or Waldorf salad, or mixed bean salad with chickpeas, red beans, black beans and black eyed peas. And they always have mesclun. I have salad and a bowl of soup if they've got the navy bean soup.
I have, lying next to me at my computer table, one of the weekly food sections of the paper, with recipes using coconut milk lying face-up to remind me to buy coconut milk and try coconut rice, using jasmine rice.
I love jasmine rice, plain boiled jasmine rice with just a touch of olive oil. |
