Banana Bread

3-4 very ripe bananas
3/4 cup DiabetiSweet Measure for Measure
1 egg
1 1/2 cups all purpose flour
1/4 cup melted butter
1 teaspoon baking soda
1 teaspoon salt

Preheat oven to 325 degrees. Lightly grease a metal or glass loaf
pan. Peel bananas and place in large bowl. Mash bananas with large
spoon. Add all other ingredients and mix with spoon until combined.
Batter will be slightly lumpy. Pour batter into loaf pan. Increase
oven temperature to 350 degrees. Bake bread 50 - 55 minutes. Let cool
completely on wire rack before removing from pan.
