No, that sounds like quite a lot of sugar in that apple butter... I don't have much of a sweet tooth though, so I may be the wrong person to talk to.

The peach butter took 1 cup of sugar for every 12 peaches, which actually seemed like a lot too, but it tasted OK.

Here's the recipe for Apple Butter that I use. Seems to use less sugar that you mom's recipe, but hey! maybe you'd better listen to mom...mom's usually know best...(-:

APPLE BUTTER

15 medium sized apples (4-5 pounds)
1 1/2 quarts cider
1 1/2 pounds (3 cups) sugar
1 t. cinnamon
1 t. allspice
1 t. cloves
1/4 t. nutmeg

Select firm, tart cooking apples. Wash and slice; do not remove core, seed or peel. Add cider and boil 15 minutes or until apples are soft. Press through a sieve. You should have about 3 quarts of pulp. Gently boil the pulp 1 hour or until it begins to thicken, stirring occasionally. Stir in sugar and spices and continue cooking slowly 3 hours or until thickened, stirring frequently. Seal. Makes 3 1/2 pints.

In the peach butter recipe that I make, I substitute apple cider vinegar for the water that it calls for when cooking the peaches... and does that every make a nice butter. I can give you a recipe for that one too if you like. Just let me know.
