James, your post sums up all the reasons to doubt the Bible better than I could hope to do. I totally disagree though.

Re:And definition 2: "despite evidence to the contrary"- -There are clear, unequivocal statements that in the Bible that those then alive would see Christ's return after his death. It's now 2000 years later.
Where is he? This is the grossest case of a blown prophecy I know of.
Twist them as you might, those statements don't go away.

The fact that it has been about 2000 years since Jesus with no sign of him is certainly not evidence against the Bible. In fact, up until a few decades ago it was 100% impossible for Jesus to return. The main reason for this is in Revelation. It says that 200 million troops will invade Israel from Asia.

To put that in proportion it is roughly the same as saying now that 5 billion (5,000,000,000) troops would invade a country before the end of the world. If someone would say this to you I'm guessing if you didn't think they were crazy you would think that couldn't happen for hundreds if not thousands of years.

I don't know about you but I'm quite sure that verse puts the return of Jesus as early as around now.
