Thanks for thinking of me, but that recipe doesn't sound Cajun to me. Way too much work. My favorite Cajun cook is Marcelle Bienvenu. Like me, she is a working mother with a family to feed, and her recipes "live in the real world."

If the chef was Emeril Lagasse (spelling?) he's not from Louisiana, he's from Massachusetts or something. But he does seem like a good cook.

I have about twenty Louisiana cookbooks, my favorite next to Marcelle Bienvenu is Paul Prudhomme.
