I like spinach and onion quiche. You can freeze them, but I think they are better if you don't freeze them. If you have a food processor, and feel like making pastry, I have some good pastry recipes. If you are going to use a prepared pastry, the kind that comes folded in the dairy case gets good marks from foodies. I always make mine.
