Sherry,
We had it for dinner and it was good! Ammo even ate it without complaining. He said- "I like the olives".
I would add lots more olives, especially since I forgot to buy the red peppers.

Mediterranean Turkey and Noodle Casserole

1 lb. med. egg noodles, cooked and drained
1 can chicken broth
1 c. skim milk
1 tsp. salt
1/4 c. cornstarch
2 c. turkey, chopped
1 (14 oz) jar artichoke hearts, drained and quartered
1 (17 oz) roasted red peppers, drained and sliced
9 kalamata olives, pitted and sliced---
(WHY NINE! SO PUZZLING!! Maybe she got bored pitting and stopped after 9, deciding that was enough-but I would use lots more)
1/2 c grated mozzarella
1/2 c. white wine
1 tsp lemon juice
1/2 tsp pepper
2 T. grated PArmesan

Stir broth, milk, cornstarch and salt together in large pot til starch dissolved. Cook over med. heat, stirring constantly, til thickened and bubbly. Stir in noodles, turkey, artichoke hearts, red peppers (if you remember to buy them) olives, mozzarella, wine, lemon juice, and pepper.
Preheat oven to 350. Spray a 3 qt baking dish with oil. Spoon mixture into dish. Sprinkle with Parmesan. Bake about 35 min-- til bubbly.
Serves 8- unless you eat like me and mine- then serves less.
