Don't think so...someone please correct me if I'm wrong.

Don't think you can do that specifically in a quote sheet, but there are some color options you can play with. Right click on any quote sheet, then >format >colors. You can do this with T&S data...again right click on T&S window, then >colors.

3) Is there an easy way to make a quote sheet of option chains? i.e. click on a ticker symbol, and have the entire options chain pop up somewhere immediately.

Yes, right click on symbol, then >symbols, >option chains. Make sure you select as new quote sheet if you don't want the current one destroyed. Or, if symbol not currently in quote sheet, open a new one by clicking on " on upper tool bar, then right click, >symbols, >option chains.
