You asked for it McBain. The King Louis Omelette... Crab meat 1 cup Onion small minced Eggs 4 beaten Olive oil 1 tablespoon Gruyere cheese 2 grated tablespoons Parsley 1 tablespoon minced Garlic 1 minced leaf Heat olive oil over medium heat, add onion and saute. Mix crab, eggs, cheese and garlic and add to pan with sauteed onions. Gently lift omelette with a spatula letting uncooked portion run underneath, increase heat and let it brown slightly, fold in half and garnish with parsley.
