The recipe Levy posted is much the way my mom always made them, with one exception, she did use the finest side of the grater, so they potatoes had a texture more like applesauce than hash browns.

Here is a bit of family folklore regarding potato pancakes...
My grandmother taught my mom how to make them. My dad having been one of the older children of 7, had to work to help support his family. By the time he got to eat, the batter of the potato pancakes had started to turn dark from the air. Due to that being how he was used to eating them, with kind of a gray color, when mom would make them she would grate the potatoes a bit earlier, so they would turn darker, as my dad liked them. So now when I see potato pancakes that are natural in color, they look odd to me. So the tradition continues!!!
