Actually, much as I adore chocolate, my favorite is still Julia Child's Grand Marnier soufflé for wonderful lightness, with a crème anglaise. Although, if you twist my arm, there's a lemon soufflé that I adore because you can fix it ahead and reheat just before serving; it's not as light, but the sucker rises again and you don't have to worry about it's being perfect when it is time for dessert. :-)
