Ever the optimist, Neocon, you are focussing on the most positive aspects! On the other hand, people whose families hail one generation back from China are mystified by what passes for Chinese cuisine. A lot of the bagels are utterly inferior and looking around for a bialy can still draw a blank stare. The comparison with heirloom tomatoes stands, I think. We have fresh tomatoes all year long, yet they are not tomatoes that offer variety of taste--even when they are really ripe in the dead of summer. Do you know that most people don't even know that there are many varieties of basil? Even as we gain, we lose as well; it is simply the price we pay.
