I do not disagree with your thesis of a rise in the common standard. However, I do point out the price. Nothing comes without a price; in this case, it can be increasingly difficult to find the "specialties" even in large cities.

Another example: The large chain drug stores offer a wide array of items, but the prescription services are often lousy, despite their sophisticated computer systems. However, finding a pharmacy that offers prompt and personal service is growing to be a daunting task as they are being squeezed out by the chains.
