Some things are intuitive and don't require step by step. You didn't play enough this weekend. Learn to right click. Anything you put in a workspace can be saved, you should name your workspaces and use "save as" to do so. That way you have the 10's of samples they provide. If you make a change to a workspace save it. On charts, set one up as you always want to see it, then save it as default. lets just take your indices. open a new quotesheet, right click, symbols/import symbols, choose US market watch.sym, now you have the basics. eliminate or add fields or columns. Now right click it and format/autosize/both. How simple can it get? Stop and think why did you lose them? reading help won't hurt.
