I think Kansas City Steak is and has been a normal cut. Almost everywhere but KC it's called New York cut. I may be wrong about that, but I believe it's a source of pride in and around KC that the New York Cut is called KC Cut.

It's immaterial which is correct. Except to perhaps a KC native. My point is only that is isn't an unusual cut of meat.

EDIT. For example, Morton's serves NY Cuts everywhere ..... except KC where it is a KC Cut. Of that I am pretty certain.
