Tiny bubbles for an effervscent New Year

PROVIDENCE, R.I. (AP) -- Scientists say there are 49 million bubbles in
a bottle of champagne. With a suggested serving of five glasses per 750
mL bottle, each of us would have about 10 million bubbles in our flute.

Edward Korry, assistant professor in the College of Culinary Arts at
Johnson & Wales University, is an expert on champagne, a product unique
to France. Others are technically sparkling wines.

Champagne is best served chilled, but not ice-cold,'' Korry says. ''The
best temperature is 45 to 48 F (7.2 to 8.9 C).

Chill the bottle for 30 minutes in a bucket half-filled with ice and
water, he says, or in the refrigerator for three to four hours.
