Well, Neo is probably right that it's unverifiable, but certainly the ones that we have greatest exposure to were transcribed by men, and by the very nature of this type of story, they were recreated constantly, at every telling. Jane Yolen in Favorite Folktales From Around the World writes that Francis J. CHilds, who collected ballads, wrote that there were three types of "tellers": the blind beggar, the nurserymaid, and the clerk--
the beggar- met the needs of his audience, and so changed every time
the nurserymaid-- changed according to what moral lesson she was teaching
the clerk- is the literary writer

But throw all that out. I like my theory that men wrote them.
