Unix programming is 'hacking' by nature

Not really. All those tools are very handy for the quick and dirty and they can be valuable components in more complex solutions, but they don't replace real programming for real applications by any means.

isn't any more valid than saying real programmers program in assembler, no?

Actually, at this point in time I would suggest that a real programmer, in Neil's definition (versus the real men or women do or don't context) would be extremely unlikely to program in assembler. The point is to get the job done and done well, not to consume huge amounts of extra time to no purpose. There was a time when one had to resort all too often to assembler because other approaches didn't provide the necessary control or performance, but there are *very* few of those situations left, fortunately.
