instead of asking for mild "parmesan", request to taste locatelli parmagiana reggiano.....if you like "bite" in a cheese this will do it....leave the "parm" to kraft...
i remember in growing up and around easter, the neighborhood butcher would set up a pen on the sidewalk with goats and lambs...pick out a cute one, he grabs it by the scruff of the neck, drags it down to the cellar, ties its hind legs, suspends it from the ceiling and summarily executes it with one swift slice....coupla hours later, ya pick it up, if it's a decent size, bring it to the bakery two doors down, into the brick oven....less work for mother!!! |
