You are assuming that the non-Caucasion spouse is not already Jewish. For example, the children of baseball great Rod Carew are not plainly Caucasian, but are plainly Jewish. The children of the heroine of The Color of Water were black, but would have to be considered Jewish by any Rabbi as they had a Jewish mother. Other than this quibbling point, you have it right; as I said, there are Jews of every race, just as there are Catholics of every race.
