An excellent idea:

An ordinary spectrograph test could be done on the knife tip to determine the exact chemistry of the steel. The test results could be compared to knife manufacturer's steel formulas. If they find a match they will then know which company made the knife.

I wonder if it's occurred to the police. And as I suggested earlier, the killer may have bought a replacement made by the same company.
