Fancy? I am not that fancy, EXCEPT for those 'additional seasonings on top.' (grin) But when I am hungry for something, it is usually something that is remarkably simple. I hear men don't generally like fruits and vegs very much. I love the dickens out of them, and can actually eat them for a meal in themselves. That is pretty simple in my opinion. (Fairly recently I received two shipments of grapefruits from Texas (the best I have ever had). I relished them-- ate them as if they were hunks of meat.)

Now the way you do a roast sounds good and simple-- let the meat do the talking. I like that. I pretty much do the same thing, except I spit roast whenever appropriate. Fish I grill, poach, broil or fry, but even this is terribly simple. I think the most complex I have ever gotten with fish was when I cooked a blackened catfish recipe that Ish printed here. It was very good and RIIICH! Whew! Loved it.

Mashed potatoes (now there is something I haven't had in awhile, and that I really enjoy). Preserve us! You've just brought to mind a dish that I love, but that I get prolly only once a year (from deer): liver and onions with gravy, mashed potatoes and peas. That is too good! My wife unfortunately abhors it. In fact, since I have been married I think the only time I have ever had it was with my sons while at camp. What is it with these new-fangled womens anyway? (grin)
