we never get to see the 'other side' of the moon from the earth?

There is a famous New Yorker cartoon from the '60s prior to the astronauts traveling around the "back side" of the moon. It shows the first astronauts looking out of their capsule window at the back side and there's nothing there - just 2x4 scaffolding.

if you look at the earth from sun, wouldn't earth rise and fall

Since the earth revolves around the sun in a year and the sun rotates in less than a month (about 26 days at the equator), yes.

not sure what the heck you're talking about

The moon's orbit is elliptical so sometimes it's closer to the earth (perigee) and sometimes farther away (apogee). When it's at the farthest point (apogee) it will appear smaller. So small that if a solar eclipse occurs while the moon is at apogee, the moon's disk will not be able to occult the sun. So instead of a total eclipse, you get an annular one.

For more than you probably want to know about perigee and apogee:

and to calculate when they occur:

Good trading! Good viewing!
