The "Office Apps" I care about are Word and Excel. I think that 500MHz is plenty fast enough for a laptop - my own laptop is 233 and that's seems fine. 64 MB RAM is probably also OK - hard to imagine doing a lot of multitasking on a laptop, or big graphics work - but more is always better in the RAM department.
