Hi Freeus: The one thing that I learned about bagels is that the water supply is the key! I've made it my own personal quest to sample the bagels around the world (hey, National Geographic (or Enquirer), are you listening???). I've got a great bagel store near me that can't be beat. They have the best egg onion bagels (among others) ever made. I'll send some to you, if you like. David
