I believe that there is a two-stage oxidation process. The browning is fast. But centuries-old bronze that isn't maintained takes on the classic verdigris color. Most statues get a cleaning every few years, and that prevents verdigris.
Old cannon barrels don't always get that level of maintenance, so it might be easier to find a green cannon barrel.
