I don't think of people as hypocrites unless I can detect some deliberate and definable deceit in their presentation. This to me is a subcategory of liar. For example: I would consider a priest who is doing members of his congregation a deliberate fraud. I don't consider people who slip in their moral convictions to be hypocrites. All of us have times of weakness.
The Catholic priest and the Rabbi were riding next to each other on a long flight overseas. The priest looks over the shoulder of the rabbi who is reading the Torah and says, "say do you people still have the prohibition against pork?" To which the Rabbi says, "I am forbidden to eat pork." The priest says, "well, have you ever been so curious that you sampled a little any way?" The Rabbi answered, "Yes, in my youth, once; but I have confidence that I will be forgiven."
