I've been in on raising ducks and spent years as a duck hunting guide. On tame ducks you have to get the grease out. God, they are full of it. Wild ducks all depend on if they are migratory or local. Same with geese.

There is also the fileting of duck breasts that gives you 90% grease free meat. Then you have to wrap them in bacon and cook them slowly on the grill. Medium rare. MMmmmm
