That ruins it. Oil, flour plus the trinity of peppers, celery and onions. Add cayenne, pepper and green onions. Brown. Add meat and cook 'till soup. Salt to taste.

I saw a show where a guy was cooking malla docks. When he showed greenwing teal I figured out he was cooking MALLARD DUCKS.

Now the fat guy had a good program and did some great stuff as did the Breakfast At Brannigons. Too much Cajun cooking is just brown flour, grease and the trinity.
