Chef Paul had a real scientific way of cooking. Heat was a spice. That guy is good. Explains stuff and why. He not only melds flavors but separates them. When and why to add. Same with Breakfast at Bennigans. Great show. This crap of oil, flower, the trinity and toss in a fish not even dressed is an abomination.
