Here we roast pigs, generally young ones, on a spit over huge beds of glowing coals. A barrier is put up, of whatever happens to be handy, to keep the people who are turning the spit from getting roasted. The kids take turns turning the spit; when they aren't doing that they throw little bits of wood into the coals and watch them burn, or see how close they can get to the coals without roasting. They love it, and they never get bored. They also love to watch the slaughtering, which takes place just before the roasting. On a fiesta morning in a rural town there is at least one pig being whacked in every back yard; makes for a bit of noise.

Not as bad as an Igorot wedding in the wealthier classes: they'll kill two or three of buffalos and two dozen pigs (have to keep up that social status) and the racket can get pretty fierce. The pigs get cooked and every guest (meaning everybody who shows up, there are no invitations) goes home with a chunk of raw buffalo meat. There are also profusions of alcohol, gongs, drums, and dancing; the whole thing goes on until nobody can stand up, generally a couple of days.

Good fun.
