Well of course equilibrium tries to assert itself right away (not literally, this is not a thought directed process). I'll digress into a big no-no for this topic and tell a just-so story (think Kipling and "How the Lepard got his spots") I of course, have no idea what happened but for point of illustration:

Noah Rat and his wife have lots of kids. They all eat the tastey grass that survived. Noah was lucky that he ate grass and grass survived and that is why the acorn eating rats near him didn't. He has kids, and his kids have kids, and pretty soon the kids are looking kind of strange because they are all mating with each other and the sexual cross check is not working too well these days. Some of the kids don't have good eyes, they have lousy eyes and normally you would expect mister dinosaur to gobble them up only he's not around. So Andy the bad eye'ed rat sniffs for his grass seed and since there's a lot he finds it, but also finds grubs and potatoes which he eats anyway. He has lots of lame-eyed kids too. After a thousand years there are so many rats that they are eating all the grass they can find, they fight. In the mean time Andy's kids are staying out of the grass fight by concentrating on potatoes and worms. Some of his kids are better than others at sniffing out the worms and some can dig fast to follow the worms. On and on it goes until you have rats and burrowing rats with a different diet. The burrowing rats may do very well if nobody else is eating worms, or at least leaving the potatoes. There is more room for variation to flurish in a time of plenty, which counter acts the built in tendancy toward equilibrium.
