| Now, down here in Bay Country, we are blessed with all sorts of delicacies. Of course, there is the steamed crab, but over the years I have come to prefer soft shell crabs. Crab cakes are wonderful, as is cream of crab soup with sherry in it. But there is hardly anything finer than a chincoteague oyster, not truly from the Bay, but from the ocean, south of Ocean City, MD. It is delicate and has just the right salinity. It should be eaten on the half shell. The local clams are usually best steamed or fried, though one can find little necks that are good on the half shell. We actually have lobster, they just do not grow as big as the Maine variety. They are very tasty, though, and come from the ocean side of the DelMarVa peninsula. There are many varieties of fin fish, but I am so much fonder of shellfish, I rarely bother.......... |
