My favorite cookie.

Scottish Shortbread Cookies

1/4 cup each confectioners sugar, and granulated sugar
1 1/4 cups butter cut into 8 to 10 pieces
2 1/2 cups flour

Place sugars in mixing bowl and mix together until fine texture.
Add butter, pulse mix until sugar disappears.
Add flour, mix until a moist and crumbly.
Put in a plastic bag and press together to form dough. knead lightly until dough holds together.
Remove form bag, shape into small balls about 1 inch.
Place on unbuttered cookie sheet 2 inches apart, flatten each with a cookie press or the back of a tablespoon.
Bake 45 minutes to 1 hour or until a pale golden color.
Remove from cookie sheet, cool on a wire rack or a cool dish.
Makes about 4 dozen cookies
