I know this is a baking thread, however, this is a fantastic recipe, and I had to share it. It's a sweet alternative to vegetables. Great for thanksgiving. All the vegie haters in my family even love this dish.

Carrot Souffle

2 lbs. Baby Carrots, boiled until soft
6 eggs
1 cup Sugar
6 Tbl. Flour
2 tsp. Vanilla
2 tsp. Baking powder
2 Sticks melted butter

Blend together the eggs and the carrots. Be sure the carrots are not too hot as they will cook the eggs.
Add the vanilla and mix.
Add the rest of the ingredients and mix well.
Pour into a 2 quart greased casserole dish. Grease all the way up the sides of dish.

Topping

1/2 cup Crushed corn flakes (yes corn flakes)
6 Tbl. Brown sugar
4 Tbl. Melted butter
Mix together in bowl and sprinkle on top of souffle.

Bake uncovered at 350 degrees for about 45 minutes.
Will rise a bit and be airy in texture. Serve right away.
