Dear JDN: I hear people say all the time, "The small ones are the sweetest." By "small" they mean the bitty, under 1 1/4 pound ones. Two pounders are, by most people, considered "large."
I can not speak about the over 40 pound ones but the 15 pound and under ones are as sweet as the bitty ones if cooked properly. There is also a lot more, easy to get at meat in them.
Mt theory? First, the chicken lobsters (under 1 1/4 pounds) cost less per pound, usually $2.00 per pound less, than the next weight up category. . I don't think the average New Englander who eats lobsters is willing to pay for a nice, meaty one such that the, "Small ones are sweeter," old wives tale lives on.
When is the lobster dinner? If you want to come the same night Tony is you better ask him.
You can laugh about starting the rumor, but if it catches-on, YOU are going to be my neighbor, the chef's, assistant in the kitchen.

P.S. I buy lobsters at a small, family owned grocery store in Eastern CT. From time to time they have lobsters as the come-on with one price per pound, no matter the size. |
