this recipe can help alleviate your zucchini surplus.
it is moist and delectable

zucchini cake:
3 eggs
7/8 cup molasses
7/8 cup brown sugar
1 cup oil
1 cup white flour
1 1/4 cup whole wheat flour
3/4 cup wheat germ
1 tsp. baking soda
1/4 tsp baking powder
3 tsp cinnamon
1 tsp salt
2 cups liquified zucchini
1 cup raisins
mix everything together and then add liquified zucchini.
add raisins.
bake 350 degrees for one hour in greased pan.
