It is an assumption that it is healthy to be a vegetarian. There is a lot of evidence that suggests otherwise. I think it is better to keep the discussion about vegetarian lifestyle a philosophical or ideological level, where it is a matter of personal preference.

On scientific level, where you would want to prove what kind of the most healthy for a human body, I think you would be on "thin ice".

You can prove conclusively that certain type of food production is more harmful to the environment than other, and production of meat requires more resources, and many of the enviromantalist enthusiasts fall into the trap thinking that if it is good for the environment, it is good for me as well. But there is absolutely no link between the 2.
