Something doesn't add up here." The reason we can be sure that the copies of the Bible are accurate is because of the sheer number of copies that we have to compare with one another. If all the original copies of the American constitution were destroyed or lost tomorrow, it would be very easy to reconstruct the original with a great degree of certainty. This is known as textual criticism. The reason that Christians believe in inerrancy is not just the accuracy of the copies, though that is important. It mostly has to do with the source of the texts originating with God. "All Scripture is God breathed" This is attested to not just by the manuscript evidence but also by archeology and history, predictive prophecy and finally the resurrection of Christ. I know that does not sit well with you but that's basically the answer.
