You'll think you've gone to heaven when you taste this soup.

Hi Drea - very nice place you've got set up here.

Although it's far from soup weather here in Texas, I'm indulging in this tonight and ignoring the fat content.

La Madeleine is a "chain" french bistro type restaurant that is famous for its Tomato Basil Soup. It is a "must have" when I pop in there for lunch, and this soup is also sold in a couple grocery stores. When I inquired about a recipe for the soup, I was told that it was not available (they have a cookbook, but the soup recipe is not included). My sister found this on the net, published in the Dallas Morning News Food Section - they had a conference recently and they printed the recipe in the back of their handouts.

La Madeleine Tomato Basil Soup

4 cups tomatoes (8-10) peeled, cored, chopped, or 4 cups whole tomatoes, crushed
4 cups unsalted tomato juice
12-14 fresh basil leaves (see note below)
1 cup whipping cream
1/2 cup sweet unsalted butter, softened
1/4 tsp. cracked black pepper
salt to taste

Combine tomatoes and juice in sauce pan. Simmer for 30 minutes over medium low heat. Cool slightly, then place in blender. Add basil and process to puree. This will have to be done in batches. Return mixture to sauce pan. Add butter and cream. Stir over low heat until butter and cream are incorporated. Stir in salt and pepper before serving.

(Note: When I make this I double the amount of basil leaves called for here. It seems to be more like the restaurants)

The Chocolate Raspberry Bars look great - I printed off the recipe and will pass it on to one of my girlfriends who owns a personal training studio for women - she's always looking for great recipes - and, chocolate/ raspberry is my personal favorite combo!

My favorite cuisine is South American/ Cuban. I'm looking forward to collecting some great tips and recipes here.
